Mango Lassi

Mango Lassi- the most favorite beverage people order in restaurants. I never had mango lassi in my life before. In my native, we always have yogurt lassi. The first time I tried it  at my friend's place, I loved it so much. It was so delicious, yummy and very refreshing for summer. When my friend shared the recipe, I cant believe this is so simple.  Just a 4 ingredient simple delicious mango lassi.

            Mango Lassi Preparation Time : 5 mins  Serves :3 Ingredients: Mango Puree (Sweetened)- 2 Cups Plain Yogurt                      - 1 cup Milk                                  - 1/2 cup Sugar                                - 3 tbsp (optional)

Procedure: Put everything into a blender and blend it to a smooth puree.  Refrigerate and serve.  Notes: You can omit sugar if the mango is very sweet.Refrigeration part is optional if you are using refrigerated ingredients.

COOKIZZA - Chocolate Chip Cookie Pizza

Today May 15 - National Chocolate Chip day. Yeah, a day dedicated for kids favorite "Chocolate Chips". So I thought of doing something special instead of baking regular Chocolate chip cookies. When I came through this recipe in Sally's Baking Addiction,I simply loved the concept of Cookie pizza. Its super yummy and perfect for crowd.

Pearl Millet Cookies/ Kambu Cookies/Bajra Cookies

Kambu / Bajra is rich in protein, fiber, phosphorous, magnesium and iron. Due to its rich composition of minerals and proteins, I always try to include millet atleast once a week in our diet. I usually make Ragi Porridge. This time I wanted to try a different millet, So bought Pearl millet flour as a change. I liked the Kambu dosa. But my kid doesn't like it that much. So I was looking for some other kid friendly recipes and adapted this recipe from here. This is the first time I'm using Millet flour in baking. Yummy healthy snack ready in 20 minutes.

Quick fudge is one of the easiest desserts I have ever made. This is a foolproof recipe, just with 2 Ingredients.

Procedure: 1. Preheat Oven to 350℉/180℃. Line an 8*8 square dish with aluminum foil and grease it with nonstick spray. 2.Using double boiler method, add the chocolate chips and pour in the sweetened condensed milk. 3.Stir them very well as they melt and you can no longer see the chips. 4. Remove the mixture and immediately transfer it to the prepared pan.
5. Cover it and refrigerate for at least 2 hours. 6. Once it all set, remove it carefully and cut it into squares.

Baked Sweet Potato Fries

Oven Baked Sweet Potato Fries! Simple,easy to make,these fries are addictive. Sweet Potatoes are rich in dietary fiber and beta carotene. Baked Sweet potato fries are much healthier option than restaurant bought fried white potato fries. 

Baked Sweet Potato Fries                 Preparation Time: 10 mins    Cooking Time: 25 mins
Ingredients:Sweet Potato - 1  Olive Oil        - 1 tbsp Garlic powder - 1/2 tsp Red chili flakes- 1/2 tsp Salt                 - needed Pepper Powder- 1/2 tsp
Procedure:1. Preheat the Oven to 400℉ and line a baking tray with parchment paper. 2. Cut the sweet Potatoes into sticks (1/4 to 1/2 inch) and toss them with the Oil. 3. Mix the remaining spices and add them to the Sweet Potatoes. Spread them on the baking tray. 4. Bake for 15 minutes, then flip and bake again for 10 minutes.
